Easter Recipe: Italian Egg Biscuits
Below is a recipe I love. I make it for Easter every year (my kids request it). I make it for other holidays, too, but I especially love these biscuits for Easter. Have a great holiday. If you don’t have time to make this for Easter, print the recipe and save for another time. I assure you, once you make them, you will again, and again and again.
Italian Egg Biscuits
- 1 Cup Sugar
- ¾ Cup Vegetable Oil
- 3 Eggs
- ½ Cup Milk
- 2 Tsp. Lemon Extract
- 4 Cups Flour
- 3 Tsp. Baking Powder
- ¼ Tsp. Baking Soda
- ½ Tsp. Salt
Preheat oven to 350 degrees.
Mix together sugar, oil, eggs and flavoring.
Gradually add dry ingredients alternately with milk. If dough is sticky, add more flour (a little at a time), until the dough can be kneaded without sticking to your hands.
Knead dough for 3-4 minutes. Refrigerate dough for half an hour.
Shape dough. I usually roll into a thin cigar shape and then starting at one end, roll in a circle. Place on cookie sheet. Fill cookie sheet and then bake for 12-15 minutes (depending on your oven).
They may be white on top, but if they are golden on the bottom, they are cooked. Remove from oven, remove from cookie sheet with a spatula and let cool.
Frost with confectioner’s sugar mixed with the juice of a lemon and some lemon zest. You can use lemon extract if you don’t have a fresh lemon. For Easter, I add a drop or two of pink food coloring for a festive look. You can have more than one bowl of frosting and make three different colored frostings, say pink, yellow, and green.
Frost each biscuit. As you frost, you can sprinkle colorful jimmies or sugar on each cookie. Let the frosting harden, then place finished cookies on a tray, or you can wrap them and bring them as a hostess gift.

best recipes, cookies so good we ate all in one night did have two grandsons over. we just came in from florida and hadn’t seen boys in a few years. can’t wait to make these for Easter Vicky

Yes, they can be shipped. Must be completely cooled and frosted. Once they are ready, they can be put in plastic ziploc bags. Be sure they are not too loose, as they will move around and could get broken or crumbly.
Once they are in a bag and box, put tissue around it so there is no movement.
Then put them in a really sturdy box to be shipped.
A thick cardboard box would be good, so that it doesn’t get crushed in shipping.
I personally would overnight, or expedite in some way. That could be expensive, but even two day would be good, just to get to its destination in a timely manner so that they don’t go stale.
