Delicious Hawaiian Treat: Pineapple!
My daughter, Jaclyn and son-in-law Christian just recently got married and embarked on a romantic, tropical honeymoon. As I looked at all the pictures people had taken of the happy couple, so many wonderful memories flooded back to me.
My husband and I spent our honeymoon in Hawaii and I remember going there and just loving the tropical atmosphere. That is where I had the best pineapple I have ever tasted. It was fresh and juicy, and just delish (as Rachel Ray would say).
Since my honeymoon, I’ve been back to Hawaii four different times. It’s a place I love to visit and wouldn’t mind going back to again; maybe in a few years with my grandchildren (Jaclyn and Christian are having twins, to be expected in November!) . I want to share a wonderful recipe with you that reminds me of my Hawaiian adventures…
Pineapple Bread Soufflé
Ingredients:
½ cup butter
1 cup sugar
4 eggs
5 slices white bread, cut into 1 inch cubes (toast them lightly, so they are stiff and not
too soft).
1 (20 ounce) can crushed pineapple, drained
1/3 cup brown sugar
Directions:
- Preheat oven to 350 degrees F. Grease a 6×10 inch baking dish.
- Cream the butter and sugar together in a mixing bowl until light and fluffy. Beat in the eggs one at a time. Stir in the bread cubes.
- Add the pineapple until well blended.
- Pour the mixture into the prepared baking dish.
- Sprinkle brown sugar evenly over the top.
- Bake in preheated oven until bread points on top are golden brown, 45 – 60 minutes. Cool before serving.
- I serve with fresh whipped cream (which I do from scratch, but you can use canned whipped cream topping)
I have doubled this for large parties, and it is truly delicious. It is actually a light dessert and I usually make it on holidays. You can serve as a side dish (without the whipped cream) or as a dessert.
So bring a little Hawaiian pineapple to your table and enjoy this yummy dessert. If you’re smart, do what I do and have printed copies of this recipe ready for your company, because I can guarantee you, they will want the recipe. Enjoy!!

Kathy, I can’t wait to try this – I love pineapple. I too was supposed to honeymoon in Hawaii 20 years ago this July but I started a new job right before I got married. So we said, maybe our 10-year anniversary. But a month before that our third child, James, was born so Hawaii was out. Doesn’t look like 20 will be the year either. Guess I could hold out for 25 year anniversary!!
